Thought for Memorial Day some may be making salsas. Here is my near perfected salsa recipe that you may (will) enjoy.
Veggies:
2 cloves garlic
8 green chilies
2 jalapeños
1 yellow onion
1lb of tomatoes (about 8-10)
1 bushel of cilantro.
2 Avacados
Mix all veggies except Avacados and cilantro in a big bowl and mix with oil and salt and pepper. Do not cut lids off peppers or peel garlic.

Once evenly coated put on foil lined baking sheet and bake at 375 for 35ish min....or until roasted to a dark almost blackened color.

Once done roasting, cut off lids of peppers and de-seed if you want less spicy, I keep them in. Peel garlic.
Place all roasted veggies in blender and drain excess liquids from foil into blender. Chop everything do not purée.....keep it chunky.

Put mixture into big pot and bring to a boil. Once boils bring down to simmer.
NOW ADD:
Cilantro
1/2 cup sweet chili sauce
1/2 cup orange juice (only if girls like it sweet...I never add it)
1/4 cup lime juice
1 thumb ginger
1/2 cup basil
1 tablespoon salt
1 tablespoon pepper
2/3 cup oregano
1 tablespoon cumin
1/2 cup apple cider vinegar
1 tablespoon celery salt
1 tablespoon liquid smoke.
Mix all in and stir. Let it cook w lid on for 10 min to bring out all flavores.

Finally cut Avacados into small mini square chunks and toss in. Stir them in and enjoy. It's really good. As yes, the proportions seem like a lot, ie basil, oregano, but trust me- they are near perfect.
