Most larger planes have a DFDR and a CVR. The DFDR (Digital Flight Data Recorder) will record, most oftentimes, the flight data from engine start to engine shutdown. The CVR (Cockpit Voice Recorder) loops over itself. The loop duration will vary from aircraft to aircraft (C-130 and B-1 are different). But if you think about it, when a catastrophic instance occurs, you really don't need more than two hours. Most of the time, you need much less.
