I like carrots.

I like to stir fry them in a bit of butter and brown sugar. My son used to not eat carrots until I did that. Now, I get that fatty to eat em up. He calls them special carrots.

Special carrots sound good but other than I typically won't eat cooked carrots. I can munch on baby carrots all day though

carrots are almost entirely vitamin A, a fat soluble vitamin, thats why when cooked in butter they taste so much better as apposed to being blanched or steamed.
brush with oil and roast or grill. Buy the bunch organic and leave them whole and skin on !
I like tarragon, rosemary and ginger as seasoning for my carrots, along with tabasco and fresh ground pepper medly.
as an alternate to brown sugar, you ight want to try honey or maple syrup.
