    Wife made pork chops last night. No idea how she made them, but they were delicious! I know there was apple and noodles involved in the recipe, and a couple other things she asked me to pick up at the store.

    Also, the pork chops were from my daughter. They had two pigs they recently butchered. Not sure if it was Bennet or Beatrice we ate, but they were tasty! Also got 2 dozen eggs from her chickens!

    Tonight is the annual Julia Child's Beef Wellington. I have a Chateauneuf du Pape to go with it. The tenderloin has been marinating for 3 days.

    Over the past year or so I have been practicing several Thai dishes. Fish sauce is an amazing ingredient. It's almost miraculous when you compare the smell/taste of fish sauce alone to the work it does in a dish.

    I agree....smells freaking horrible....tastes nothing like it smells and really brings an exotic wang to anyhting you use it with. I LOVE spring rolls and fish sauce.

    I made this dish last fall sometime. Nam Tok - "Waterfall Beef Salad". I've been meaning to do it again:


    It's Flank steak marinated in a Soy Sauce based marinade and grilled over high heat. After resting, slice against the grain and toss with shallots, green onions, cilantro, lime juice, Fish Sauce, and mint leaves for garnish.
