Wife made portobello stuffed peppers the other night, with ground beef, onions and spanish rice + a bunch of other seasonings. Delicious!

Baby reds, cut into cubes. Melted margarine, paprika, garlic, hot shot. Toss with potatoes in bowl. Oven sheet. Baked about 40 minutes at 400, turn with spatula about every 10 so they don’t stick. I was out of olive oil, fwiw.

Hmm, ok. I mean, they're potatoes so you can't **** them up too bad, but there are a few questionable decisions in here - starting obviously with ever using margarine in the first place. How crispy did they get? WTF is hot shot?

The best roasted potatoes are with olive oil, garlic, onion, salt & pepper and cooked in a covered dish/pan until outside/edges are crispy.

I didn’t have olive oil, and didn’t feel like driving to the store only for olive oil, so improvised. Other than that, meh, it’s basically what you described. I feel like you’re arguing semantics here.

Also, McCormick’s Hot Shot. It’s just a pepper blend.

Onions are the key. But I'll eat pretty much any potato.

That’s fair. I’ve done a grill foil packet of onions, potatoes and bell peppers with olive oil and seasoning, but it’s 95 and humid, so I chose the indoor method tonight.
