    I marinated some chicken cutlets in lime, oil, cumin, garlic, chili flake and cilantro. The wife is making corn tortillas by hand. Fajita night!

    Chicken pot pie tonight. I cheated a little and had the wife pick me up some pre-made Pillsbury pie crusts.

    I didn't know it had a technical name of "Velveting", but I have used cornstarch slurries to thicken sauces etc. many times. PAGS posted a General Tso's chicken recipe years ago that uses this method of coating the chicken in cornstarch before frying it. I've seen it in other chinese-type recipes, but never have seen it called velveting.

    One of my favorite easy dinners. Korean beef bowl.

    Garlic, hamburger, sauce is brown sugar, soy sauce, sesame oil, ginger and pepper flakes. Add green onions and sesame seeds. Mix with brown rice. Tasty!

    Instant pot chicken soups are the bomb...I made pho last night which is basically the same thing except it doesn't pronounce its L's that great. But hey, it knows two languages which is more than I can say.
