    Made some red beans and rice tonight, no recipe, no measurements, all gut feel.

    Man. I think I got a gift. It's like...the rice ain't mushy at all, just perfectly soft, but utterly dry. And the sausage and cayenne and flavor, it pops. It's really damned good after a reheat, too. I don't think I'll ever replicate it.

    Withholding comment until I get a better idea on how true to creole your recipe may or may not be. Red beans and rice is a thing of beauty when prepared correctly.

    Vegas sucks away from the tourist areas. There is still plenty of restaurants everywhere though, just grab an Uber man
