well its not for tonight but it was so good I had to mention it... last night we made quick fried shrimp with sweet chili aioli, green lipped mussels with cream sauce, and lobster pasta. It was so damn good I think we are going to make the same thing again next weekend.
What am I having for dinner tonight? Well it won't be the huge batch of beef stew I made yesterday in the slow cooker b/c my kids ate it all.

I smoked a port butt Saturday night overnight. We had that for after-church lunch yesterday.
Then, using some of the leftover pulled pork I made Hum Bao (Char Siu Bao). Delicious little dumplings. Kind of like an Asian Bierock.
Wow, they were delicious! First time I've tried to make anything like that.

I have a Big Green Egg (I highly recommend for its versatility), which keeps a really stable temp once you have practiced with it and get it set up right.
I used to set my alarm and check in it every 3-4 hours overnight. For the most part, I would get up, it would be right and I'd go back to sleep, but every once in a while I'd need to make a small adjustment to one of the vents. Usually, though I'd feel like I should have just slept through, but every once in a while I'd catch it going too hot or too cold.
However, last Christmas I asked my wife for a BBQ Guru DigiQ DX2. This thing is freaking awesome, and they have kits for most of the big-name smokers on the market. You set the temp you want to maintain, and it keeps it at that temp via an electronic fan system linked into it. Since I've been using that, I just go to sleep and don't worry about it.
That's awesome. I really want to get good at smoking meat. My dads smoker is awesome...has a pizza stone and the whole bit...but I don't wanna spend $1K+ on a smoker.
