    Figuring out my recently purchased Costco Kamado Joe after a few cooks and after a few failures...holy shit.

    Did some brined chicken breast with white sauce and white rice with some fresh tortillas out of the Big Bob Gibson cookbook on the Kamado today -and I don't think I have ever cooked a chicken breast this well.

    Was unreal. My wife and daughter were making sure there was nothing left in the plate. It's going to be some time before I go back to a gas grill. Charcoal is worth the time.

    Have a couple things to make this weekend. Sunday dinner will be green chili lasagna. Chicken, green chiles, crema, mozzarella, lasagna noodles. Never tried it, but recipe looks delicious. Tomorrow I'm making an Italian Cream cake with coconut, pecans and rum. My aunt used to make it when we were little, it's literally to die for
