If crack was a soup, it would be that one--bacon and beans are more than the sum of parts.

Fresh bay leaves also combine with bacon fat to create something mystical--a reason to live.

I hope this doesn’t make Davii and Nomad cringe. I made a chicken jambalaya tonight. It’s simmering on the stove, cooking the rice. Smells great.

*The statements above are my opinions, unless they are links, because then they are links, which wouldn't make them my opinions, and I suppose stats aren't necessarily opinion, but they are certainly presented to support an opinion. Proceed accordingly.

Here's one I've used for a chicken/andouille sausage gumbo. Came out really good, adjust spices to your taste.

I used this one for a party as it's a large amount of food but you could cut it down. This is from Commander's Palace, one of the greats here. Chicken/Mushroom.

The thing about gumbo is all in the roux. If you get the roux right your gumbo is going to be great. Too thin and it'll be too soupy. Overcook and your roux will take on a burnt flour taste. Practice makes perfect!

Cool. I'll give it a try.

Nomad, the recipe calls for tomatoes. Please don't judge me!!
