Ended up making the pozole tonight. Did an instant pot version, best pozole I've ever had. Holy shit, tasty! Poblano peppers are just as bad as green chillies to the eyes and nose membrane. Ugh!

Sure, I pulled it from a popular instapot book. Basically coco oil, ginger, onions, chicken thinly sliced, I added mushrooms, hot peppers (serrano? looked like more compact jalapenos), green curry paste, chicken stock, some veggies. Recipe called for green beans, but you could go a million directions--potatoes, carrots, bamboo shoots, etc. Instapot makes a lot of crap super easy. Just brown the meat, carmelize/soften the veggies, then pressure cook to ensure the meat is fully cooked. Salt and pepper. Man, that device makes me feel like a chef, no lie.

I wish I had the avocados too. I just did some cilantro, green onions, cheese and sour cream. That tamed some of the heat. Wasn't to sure about sticking the cinnamon stick in there, but it was real subtle. I'm not big on spicy, but this was a really flavorful heat, not just burn your taste buds. Keeper recipe! My oldest said it was the best thing I've ever cooked. Win! He laughed when I said I was making it, said that was better left to the experts. Ha!
