    I hope this doesn’t make Davii and Nomad cringe. I made a chicken jambalaya tonight. It’s simmering on the stove, cooking the rice. Smells great.

    Here's one I've used for a chicken/andouille sausage gumbo. Came out really good, adjust spices to your taste.

    I used this one for a party as it's a large amount of food but you could cut it down. This is from Commander's Palace, one of the greats here. Chicken/Mushroom.

    The thing about gumbo is all in the roux. If you get the roux right your gumbo is going to be great. Too thin and it'll be too soupy. Overcook and your roux will take on a burnt flour taste. Practice makes perfect!
