Did anyone else know about Velveting? (use of cornstarch slurry to delish-ify everything)

PAGS posted a General Tso's chicken recipe years ago that uses this method of coating the chicken in cornstarch before frying it. I've seen it in other chinese-type recipes, but never have seen it called velveting.
