    Made a brown sugar dusted chicken breast with guac cream sauce last night with yellow rice and salad. Recipe:

    For sauce
    1/4 cup of sour cream, fresh parsley, and green onion.
    1 whole avacado
    1/8t cayanne pepper, 2T lime Juice, 1/8t cumin, 1/4t salt

    Mix in a bowl and chill at least 1 hour before serving to let the flavors develop.

    For chicken:

    Mix 2T brown sugar, 1/2t salt, 1/2t pepper, 1/2t cumin and sprinkle on both sides of for chicken breasts.
    Preheat oven to 400 degrees. Brown chicken on both sides and then bake in the oven for 10 minutes.

    Serve with sauce on the side.

    That sounds great. I love Italian!

    I cooked chicken in the slow cooker yesterday. I took almost two and a half pounds of boneless, skinless, thin-sliced chicken breast and a bunch of salsa and cooked it on low for six hours, shredded the chicken, cooked some black beans and Zataran's yellow rice and made some shredded chicken soft tacos. It was amazing.
