I would think butternut squash would just turn to mush in a stew?

I would think so too if you leave it in the whole time but maybe adding it later?

veggies should be added to a stew relative to their density.
carrots and potatoes can go in early, peas and mushrooms, only in the last 20 minutes.
' chuncks of butternut squash would retain their shape if they did not boil and only simmerd for for 20 minutes or less.
B squash is more likely pureed to give the broth viscosity and texture, instead of a roux.
so it is really more like a thick B-squash soup than a stew.
flavored with maple syrup, carrots, sweet onion, could be a nice winter vegetable stew.

just checked the recipe, as i suggested, squash chunks added in last 30 minutes of prep, stop cooking when chunks are tender.
this isd a sausage stew with chunks of butternut squash.

I don't know what's for dinner tonight either, but tomorrow I think I'm going to try that Indian place and have that during the early game.
