    My local grocery store had bone in rib eyes on sale at $7.99 a pound. Cooked a 1 and a half pounder in the cast iron skillet with a baked potato.

    Do you do the steak all on the stove top, or finish it in the oven?

    And does Estela make green chili?

    The reverse sear is the way to cook a steak if you don’t have access to outside grill.

    I sold my Weber kettle to my neighbor when I left Mexico and haven’t gotten one here yet so I did it on the stove. Applied salt and pepper generously and left it on the counter for an hour before cooking. Did 5 minutes a side with the pan screaming hot and let it rest for about 12-15 minutes. It was thick. Nice char on the outside and pink/red in the middle. Came out great!

    Estela does not make green chili, she leaves that to me, but she did make tamales de pollo and rajas with a green mole on Christmas!

    So I picked up a 2 inch grass feed local NY Strip for dinner tonight. Should be good.
