    Her brisket last night was actually outstanding. She cooks it in a big roasting pan. She caramelizes onion and celery, throws in sweet paprika several bottles of Guinness and I don't know what else.

    I asked her if the sauce is the same recipe as always and she said yes, but this is the 1st time she used Guinness. Maybe she used a lousy beer before that I didn't like.

    I think I posted a brisket recipe in the BBQ thread. I use Dr. Pepper
    guiness is probably great too !

    I got a brisket Zam. What now?
    remove it from the bag, wash it, dry it.
    place it in a marinade of Dr. pepper, sliced onions and vegetable oil (one cup)over night
    It should be completely submersed in this "bath".
    remove from this 'marinade. and then grill each side for about 3-5 minutes each side over direct heat on your BBQ.
    I reccomend a hot smoke along with this grilling process by adding soaked pecan wood chips to your grill.
    (soak the chips for 10 minutes in water while your grill is heating up, you want your grill as hot as possible for this first grill/ smoke phase.)
    after you get a nice brown grill marks on each side, return your brisket to the same marinade and turn your grill down to a low heat or turn off one side
    ( you are working with a gas grill ,yes) then place your grilled/ smoked brisket back in your BBQ on the cool side of the aparatus, cover(put the lid down) and cook for one hour.
    turn the sover and continue cooking for another hour.
    remove the brisket from the liquid and let stand at room temperature for ten minutes.
    take its temperature, should be more than 155 degrees.
    finish off your brisket with one final smoke.
    again soaked peacon chips, but this timethe brisket is out of the liquid and NOT directly over flames (heat source)
    turn up one side of your grill and put your brisket directly on the grates, away from the heat.


    you can add some smashed garlic to your marinade if you like and also add fresh cracked pepper on this final phase.
    the braising liquid/ marinade?
    after the braisng put this strained mixture in a pan on the stove top to boil and reduce.
    you can use it for a sauce to be poured directly over the sliced brisket.
    when you remove the brisket after this fianl smoking phase, again let it rest 10 minutes before you slice it.
    If you have not worked with a brisket before, be sure to slice across the grain lines that you will see running along the top of the meat, this is critical.
    also if your brisket is a full one with deckle or smaller top muscle caps, it is best to seperate them from the main , large muscle and slice those individually as well.
    you can add BBQ sauce as a condiment.

    Is Jewish a race? I thought it was a religion. Im not trying to be a smart ass, I'm seriously wondering. You have to forgive me, I know noting about Jewish people other than what I see on TV. We don't really have Jewish people in Western Canada and I have never met one.

    Yes I think it's a religion and not a race. I had this debate with Nut last year. I forget which side I had but I do believe he won the debate. That Nut is a smart kid. And a good boy too.
