    You ever eaten 'real' boudin? When my Paw-Paw would butcher hogs, they'd take the intestines (after being thoroughly cleaned and cooked) and stuff them with a mixture of rice and ground up pork along with spices & green onions. Damn good. Nothing went to waste when butching the hogs.
