I will be making Eggplant lasagna. No meat, no ricotta. But plenty of fresh spinach, eggplant, mushrooms, peppers, onion, sauce, garlic, mozzarella and Parmesan.

Italian Beef sandwiches tonight.

In order to learn how to salad, I might have to have two today. Lunch and dinner salad.

Caesar is healthy, unless you're shooting for a no cholesterol diet, but the cholesterol from eggs is healthy. Store bought dressing also has corn syrup
