Beef smoked sausage with red bean and rice.
These Enchiladas are pretty easy. Make as spicy or not spicy according to your 9 person household.
2 lbs of chicken, sautee in some oil and seasonings then pour in 1/2 a jar of mild salsa and 1 cup water. Let simmer for about 15 mins, covered. Shredd with 2 forks. Uncover and add in 1/2 jar alfredo sauce (Ragu makes one).
Let continue to simmer for about 10 mins on medium heat.
Get a large baking dish and a package of 10-12 flour tortillas (the taco or fajita size ones). In each one, put a spoonful of the chicken mixture onto the torilla, add a little shredded mozzarella cheese, roll up, and put seam-side-down into a baking dish.
Do that 10-12 times.
Mix the other half of the alfredo and salsa with 1 cup water. Whisk together.
Pour that over the whole dish. Make sure most of the rolls got the sauce.
Top with the rest of the shredded mozzarella and cover with tin foil.
Bake in 350 degree oven for about 30 mins.
Serve with:
Shredded Lettuce, diced tomatoes, sour cream, hot sauce, cilantro, etc. Whatever your family likes!!!

I'm thinking either big corned beef and swiss sandwiches on rye bread or reuben's, haven't decided.
The cannoli the other day could be improved on....so I did homemade ones today. Made dinner for my parents. Delicious!!!
