My all time favorite is Last of the Breed, but the setting is Siberia. I'm not sure what would be best for you to read first, what best captures how well he can relate adventure in the 1800's American West.
My son and I just finished The Lonesome Gods, and that one would be a good one to start with. Representative. 1850's-ish Los Angeles/Mojave and SW USA.
I'm currently reading Jubal Sackett, which some call his best work, but it takes place in the 1700's or something like that. It is badass.
I think about your appreciation of Deadwood, etc., and L'Amour would never drop a c-bomb in his works. He was raised in 1910 North Dakota and has a deep and abiding respect for wildlife, the austere western US geography, and Native Americans. In fact it is this iron (?) morality that made me think of you. Some kind of weird congruence. The way you respect life. He's like that.
Anyway, my personal recommendation is Last of the Breed or Lonesome Gods, but I think you should research a little on your own. Personally I think he got a lot better toward the end of his run, so I'd look toward 1980's and recent novels.
tl;dr -- Last of the Breed as a work of ficiton, Lonesome Gods as a great SW USA cowboy novel
