Chicken pot pie tonight. I cheated a little and had the wife pick me up some pre-made Pillsbury pie crusts.
Did anyone else know about Velveting? (use of cornstarch slurry to delish-ify everything)

I didn't know it had a technical name of "Velveting", but I have used cornstarch slurries to thicken sauces etc. many times. PAGS posted a General Tso's chicken recipe years ago that uses this method of coating the chicken in cornstarch before frying it. I've seen it in other chinese-type recipes, but never have seen it called velveting.

One of my favorite easy dinners. Korean beef bowl.
Garlic, hamburger, sauce is brown sugar, soy sauce, sesame oil, ginger and pepper flakes. Add green onions and sesame seeds. Mix with brown rice. Tasty!

Homemade Tortilla Soup. Damn good.
Well, x at least something good came out of today. My first try at green chile. A little to much heat for me, but the fam loves it.
