What is everybody having for Christmas dinner - i am looking for some ideas (apart from the obvious), starters, mains or desserts.

Turkey, Spiral cut ham, mashed taters, gravy, stuffing, green beans (some veggie casserole of some sort) some sort of bread/rolls, so basically thanksgiving all over again - which is OK with everyone in our family

Dessert is still unknown - it will be a last minute decision w3hile shopping Tues night

Are we eating together? Sounds a lot like my menu, save the Christmas pudding, but adding brussel sprouts. We usually have some Scottish/British dessert which I don't know the name of. Big dish (think of an upside down cake cover) with whipped cream, jello and various fruits.

Maybe cheese and perhaps shrimp for mine and Ottokar's wives. Shrimp are revolting water insects, though Mrs. Dreadnought gobbles them up on sight

I hope you are not using a mixer b/c potatoes release starch when their cells are ruptured. A mixer will cause the spuds to become too gluey.

You use a mixer to make bread, not mashed potatoes.

I am thinking salmon and prawn parcels to start

I will have a spicy beetroot and avocado salad or maybe garlic mushrooms and roasted peppers.

Usual Turkey dinner (i will have this without the Turkey)

Eton mess or sherry trifle for dessert.

Maybe going to chuck in a weird pineapple with cracked pepper course while I am at it.

My mom's husband (Stepfather) is kinda a dick when it comes to our family potluck Christmas dinner. He always brings his own Tupperware containers and will pack his "to go" package of leftovers before everybody has finished their meals!

In other words, he always wants to make sure the complete meal is available to him even if a family member hasn't had their fair share yet. I have sen him pack the rare prime rib pieces away before everyone has sat down.

My wife is infuriated with this practice and I fear she will snap soon.

Do they host Thanksgiving? He probably feels like that's his entitlement for hosting, even though it's still a dick move. But if he neither hosts nor prepares the meal, then you have to put an end to that! (I'd probably tell my mom to confront him if I were you.)

IDK about Thanksgiving. We do Turkey Day w/ my wife's family and X-Mas with mine. My mom and her husband are both in their mid 70's. They're both stubborn and not about to change now. They protect each other. They are sheltered and it just would not be worth an engagement over food.

Christmas Eve is seafood bake with clams, mussels, shrimp, crab, lobster, corn, sausage, veg...
christmas day is turkey, ham, brussel sprouts, sweet potato, vegetables.
New years day is prime rib, garlic mashed, veg, yorkshire pudding

Generally the same every year

I think its pretty common, actually. Most folks I know think its weird that I eat roast beef; my wife had never heard of such a thing. Lasagna was her Christmas dinner

Grandma is from Scotland. We have it every year, although I admit at first I thought it was the gravy and not the breaded "bowl".

That is one of my favorites.

There is a "Pancake House" back home in Liberal Kansas that is an awesome breakfast diner. They do one there. I searched for years for a recipe that replicates their apple pancake. That one is it. The only different thing that the pancake house back home does is that they have a cinnamon syrup to put on it. It's a light syrup (not maple) reddish in color, and cinnamon flavored.

Spiral ham is a ham that is pre-cut in a spiral manner. Makes carving it up easy as cake.

Fingerling potatoes, are small potatoes that kind of look like fingers I guess. Not quite the same as new potatoes, but similar in size.

Coke and Dr. Pepper also work well when re-heating brisket, or pulled pork etc. I've used it often when reheating BBQ of all kinds.

you know, I have never done that and it makes a ton of sense! once its pulled it gets really dry, that would help

Brisket's the worst. Once you slice it, it immediately starts drying out. This works great to keep it moist when re-heating.

It's a recipe I learned years ago when I use to be a waiter at a fine dining establishment that provided table side service. We flamed steaks and desserts table side and also prepared authentic ceasar salads and wilted spinach salads from scratch, table side.

saute cooked bacon and red onions with dallup of olive oil and generous portion of brown sugar and small amount of dijon mustard.
When onions start to soften and brown sugar is carmelized add small amount of red wine vinegar and worcestishire.
sautee until it has consistency of syrup.
Pour dressing over the top of spinach (remove stems prior) and cover for 2-3 minutes. (This is the wilting process)

There you have wilted spinach salad.


Does wilted spinach tasted better than firm hard spinach - I am leaning towards no -

I've had both, and wilted wins hands down.

Excellent vodka.....I use to make a drink I dubbed "Dennis the Menace" with Kettle One back in the day when I was a night manager at a large sports pub.

1oz kettle one
.5 oz grand marnier
.5 oz kalua

It is really good....it's strange that I haven't made it in about 8 years, but my family loves the authentic ceasar so much that I usually make that. I don't cook very often because my wife is so good at it.

It's a recipe I learned years ago when I use to be a waiter at a fine dining establishment that provided table side service. We flamed steaks and desserts table side and also prepared authentic ceasar salads and wilted spinach salads from scratch tableside.

saute cooked bacon and red onions with dallup of olive oil and generous portion of brown sugar and small amount of dijon mustard.
When onions start to soften and brown sugar is carmelized add small amount of red wine vinegar and worcestishire.
sautee until it has consistency of syrup.
Pour dressing over the top of spinach (remove stems prior) and cover for 2-3 minutes.

There you have wilted spinach salad.

I've had both, and wilted wins hands down.

Any chance of giving us this recipe too :) Caesar salad is my fav!!!! The first restaurant I worked at had the most amazing Caesar dressing - I have yet to find anything even close

I don't have exact quantities because I eyeball most of it, but if you mess around with quantities of the ingredients you'll find a flavor that suits your palate.

Dressing for two :

Use dollop of olive oil and two anchovies; mash into paste.
two egg yokes and approximately 1 cup of olive oil, stir/mix
add approximately 2 tablespoons of worcestishire
2 teaspoons of red wine vinegar
1-2 teaspoons dijon mustard
1 tablespoon garlic puree (fresh is preferable) stir again.
Grade fresh parmesan, you will use almost all of a small wedge.
Dump handful in dressing and mix
Dump two small heads of chopped romaine lettuce in dressing
be sure you cut off the dark green tips of the romaine and throw away due to bitterness
then add two more handfulls of parmesan and toss
don't add too many croutons because the flavor should come from the dressing

If dressing is too tart then decrease dijon or wine vinegar and /or add worcestishire
if dressing is too bitter do oposite

I used to make Caesar salad table side in my younger days and my recipe was very similar. Except I added a couple dollops of Tabasco to the dressing as well.

Beside that it was nearly identical.

Two dollops of tabasco, seriously? I'd surely try it, but that sounds like a mouth of fire. Did you substitute the wine vinegar for tobasco, or use both?

No, I used both. Tobasco isn't very spicy. But I liked my Cesear with plenty of bite.

Ceasar salad was invented in Mexico, Tijuana I believe.

It's just not the way I learned. I could add lemon, but I would have to cut quite a bit of the red wine vinrgar

We had a turkey, mashed potatoes with a rue/gravy, stuffing, sauteed carrots, and salad. Dessert was cheesecake, apple cake, and chocolate cream pie. It was glorious.

we had a stuffed bread concoction my wife makes with sausage, egg, and cheese for breakfast, and fresh pineapple on the side. That was topped off with cheesecake. I was so stuffed after the late afternoon meal I couldn't eat any dessert....of course I did have cheesecake for breakfast.

So my turkey came out fantabulous. I freaked at first because it wouldn't fit in the oven. The oven in this house is ridiculously small. So I put it in my roaster. It doesn't get that nice golden brown but it was so moist and tender. The ham came out good but the smoker sucks ass and I'm sending it back. It's a cheap POS. Mashed potatoes came out amazing - even with an electric beater. homemade Mac n cheese, Stuffing, squash/zucchini mixture, corn on the cob, lil smokies, and I burnt the asparagus. I put it in the oven and the baby was crying so I went to get him and forgot about the asparagus.

This morning I made homemade pecan waffles with my new waffle maker. They were the freakin bomb!!!

When you posted that link the other day, I thought to myself, "that looks like a cheap POS". But I kept my mouth shut since you'd already ordered it. The walls were way too thin, and no way to really seal it good. Temperature control would be nearly impossible.

How it got such great ratings I will never know - there was NO way to control temperature - it "smoked" it fine but it didn't heat it up at all - had to stick it in the oven - thank god for amazon returns

I like marinading the chicken breasts in the Carribean Jerk. I grew up eating rice with almost every meal, and we still do eat a lot of rice.

Cook your turkey the day before and then just cover with foil. That way on Christmas day itself you can just slice it up and cover with gravy and foil and heat up in oven when your roast potatoes are cooking.
I usually do for starter
