I am always looking for new holiday recipes, so feel free to post your recipes.

Last night, we had our annual Thanksgiving dinner at Church, and our minister made/brought this, and it was great.

SWEET POTATO CASSEROLE

4 cups cooked, mashed sweet potatoes
1 cup sugar
2 large eggs
1 tsp. vanilla
1/3 cup milk
½ cup butter, softened
1 cup brown sugar, firmly packed
1/3 cup flour
1/3 cup butter, softened
1 cup pecans, finely chopped

Beat first 6 ingredients at medium speed until smooth.
Spoon into lightly greased 3 qt. shallow baking dish.
Stir together brown sugar and next 3 ingredients.
Sprinkle over casserole.

Bake at 350 for 30 minutes.

8-10 servings

Carol...I have that recipe and it is sooooooooooo YUMMY!

But I won't make it anymore cause I am the only one who will
eat it.Hubby will eat some at dinner and that is it.It is more like a
dessert to me.The last time I made it,I nearly made myself sick because
I couldnt stop eating it.That is no lie.

Thats how good it is........sorry for rambling.I will try and get a recipe
posted.This thread is a good idea.

Hi KCLady - I am definitely going to make the Sweet Potato Casserole on Thanksgiving, as it was YUMMY.

Well, geez, Denver....I'm trying 'not' to think about food to shed some pounds! You're not helping me at all here. :D

That sweet potatoe casserole is very good, yes it is.

Another way I 'love' sweet potatoes? And you'll have to figure out measurements and such, for I do not measure hardly ever....

Bake fresh sweet potatoes until tender
Peel potatoes
Place in large bowl and use mixer to mix together (as with mashed potatoes)
Cut oranges in half
sqeeze oranges into the mixture (but save halves)
Add a pinch of brown sugar
Add butter (softened)
Blend together
Pour batter into the orange halves
Bake on 350 for 30 minutes.

On some I place large marshmellows, some with butter, etc.

THe best (most time consuming but OH SO WORTH IT) Pumpkin Pie you will EVER eat!
Makes 3 9" pies (I cheat and buy the frozen pie crust cause it takes a lot out of me to make the pies)
You will need 3 large bowls!

Step 1: Mix together following ingredients
3 3/4 C brn sgr
3T Flour
1 1/2 t salt
3 t cinnamon
3/4 t nutmeg
3/4 t ginger
3 C Pumpkin (I always use Libby's and they don't pay me to say that!:laugh:)

Step 2 In another bowl
Beat together 9 eggs until good and fluffy


Step 3

Scald 4 1/2 c milk then add 6 t butter stir until melted. Add milk/butter to eggs beating vigorously until well mixed. (you can get lumpy if you don't beat
right:eek:)

Step 4

Pour the milk/butter/egg mixture into the pumpkin mixture. DO NOT BEAT! Fold it over and over until well mixed.
Fill pie shells to top

Bake @ 450 for 10 minutes and at 350 for 40 minutes

This is YUMMY!! and no guarentee that it will help ANYONE on a diet. I personally feel that if you want a small piece you must have it espeically over the holidays. So DON'T ruin this great pie with "diet" whip cream! Get the REAL Stuff!!

When I make the pie crust for my pumpkin pies, I add rolled oats, crushed up ginger biscuits, and lots of nutmeg and ginger!

Oh, that sounds good - when you have time, post the recipe
