Seems like I've seen photos with Red and Blue beanies. Now yellow. What's the significance? When are they used?

Used to separate one set of players from the other set. For example, special teams. The kick off team would wear them while the kick return team wouldn't. Because both offensive and defensive players wear certain jersey's, it might be hard to tell them apart, therefor, the helmet caps come in handy.

They're almost exclusively for special teams... Normally they'll have offense in blue and defense in white (or vice versa)... But on special teams there are offensive and defensive players who play, so that's how they tell who's on which side.
